Give Barley a BoostPair of Winners Two SAIT students, Sarah Morley and Marnie Fudge, took first and second place at the Alberta Barely Commission’s recent 2008 Barley Baking Contest. “My recipe was inspired by my instructor, Chef Teddi Smith,” says Morley. “She knew I enjoyed doing cakes and we found that emulsified sponge cake worked better with barley.” She says that using the emulsifier improved the cake’s flavour and texture. “If I ever need to make another emulsified sponge cake, I’ll use barley,” Morley adds.
