Cook it Up Today

You came home from the U-pick farm your family visited with an armload of berries, new peas and baby carrots. What do you do? Feed the family, that’s what. Nearly any kid, from about age seven, can cook for a day - all three meals - with a little help from a grown-up. It’s easy and fun. We used recipes adapted from The Amazing Little Cookbook, found at www.healthyalberta.com.

Breakfast bonus:
Yo-yo-yogurt Crunch makes the most of those strawberries at their summer peak. It’s so good, it’s like a dessert. You need: 1 cup (250 mL) of cereal, 1 1/2 cups (375 mL) yogurt (any flavour) and 1 1/3 cups (325 mL) of berries. In four tall glasses, spoon in the ingredients in alternating layers. Serves 4.

Perfect picnic lunch:
Hard boil and chill two to four eggs. Get together some packets of healthy sunflower seeds and raisins. Roll up two pieces of whole-wheat flatbread prepared with spreadable cream cheese. Add two small zip-style plastic bags filled with fresh, washed and peeled baby carrots and sliced sweet bell peppers. Grab two bottles of juice or water. Put it all in a thermal bag with an ice pack and you have a perfect lunch to go. Then take your mom by the hand and head for the park. Tell her lunch is on you. Serves 2.

Dinner winner:
Your parents will be amazed as you make dinner with just a little help from them, using some of the ingredients from the U-pick you visited. It’s called Honey Bee Chicken. Blend a few berries and a bit of banana with a cold glass of milk for a fancy drink with dinner.
