One potato, two
Need a change from ho-hum sandwiches? Try a baked potato stuffed with loads of nutritional goodies like veggies and cheese. This recipe makes it easy to pack a lunch that will make your co-workers drooling with envy. (Hint: make a couple extra to freeze). Baked Stuffed Potatoes4-6 baker potatoes Wash & fully bake the potatoes. Scoop out the insides of all potatoes into a bowl. Mix with: 1/2 cup (125 mL) shredded cheddar cheese Fill potato shells....sprinkle with paprika or with extra grated cheese. Warm in oven at 325 degrees until cheese is melted and potatoes are hot on the inside (about 25 minutes). Serve and enjoy! Tip: Always bake a few more potatoes just so you can fill the shells fuller
