These are incredible! They always bring me back to memories of Christmas at my parent’s house. My mom made them every year, with the help of four kids of course. Our job was the rolling and coating. It was a great way to spend a day with family. Enjoy!
¼ cup margarine or butter ½ cup milk 2 cups white sugar 2 tbsp cocoa 21/2 cups coconut 2 cups rolled oats 1 tbsp vanilla
Melt and bring to a boil the margarine/butter, milk and sugar and let boil forfor 3-4 minutes. Stir constantly. Add the cocoa to the mixture and stir. Remove from head and cool slightly. Add coconut, rolled oats and vanilla and mix well. While the mixture is still warm, roll into balls and coat with remaining coconut. Let stand until firm and keep refrigerated.
