Colleen’s Favourite Cookie Recipe - Cinnamon Sugar Butter Cookies

This was the very first cookie that I baked in my new apartment. It reminds me of great times spent in my very first home away from home when I was free to cook whatever I would like. I enjoyed these cookies warm from the oven on my comfortable couch with a glass of cold milk watching good TV. This to me is the ultimate comfort food and can always bring a smile to my face. They stay chewy for days but are always best fresh and warm.
Topping
3 tablespoons granulated sugar 1 tablespoon ground cinnamon
Cookies
2 ½ cups all-purpose flour ½ teaspoons baking soda ¼ teaspoon salt 1 cup (packed) dark brown sugar ½ cup granulated sugar 2 sticks (1 cup) salted butter, softened 2 large eggs 2 teaspoons vanilla extract
Preheat oven to 300 degrees F. In a small bowl, combine sugar and cinnamon for topping. Set aside.
In a medium bowl, combine flour, soda and salt. Mix well with a wire whisk and set aside. In a large bowl blend sugars with and electric mixer set at medium speed. Add the butter and mix to form a grainy paste. Scrape sides of bowl, then add the eggs and vanilla. Mix at medium speed until light and fluffy. Add the flour mixture and blend at low speed just until combined. Do not over mix. Shape dough into 1-inch balls and roll each ball in cinnamon-sugar topping. Place onto ungreased cookie sheets, 2 inches apart. Bake for 18-20 minutes. Immediately transfer cookies with a spatula to a cool flat surface.
Yield: About 3 dozen
