Cheapskate's Challenge

In the summer issue of Food For Thought we asked readers for their favourite low-cost recipes. Thanks to everyone who sent in a recipe. In the end we chose this one, Kim’s Kicking Chili. It’s as tasty as it is inexpensive. Try it tonight!

Kim’s Kickin’ Chili
At an approximate cost of $1.42 per serving, Kim Champigny’s chili wasn’t the cheapest entrant, but it packed one of the best nutritional profiles, and earned points for ease. “Dinner is ready in about 30 minutes, including prep time,” says Kim. She advises that you can adjust the amount of spice to suit your family’s taste buds. “We take this camping and put leftover chili on taco chips with layers of cheese and salsa for excellent nachos.”
