Fudging it in St. IsadoreWhen fourth-generation farmer Daniel Prudholme isn’t tending to the grass-fed beef at Rosewood Meadows Farm near St. Isadore, he’s whipping up a few flavours of all-natural fudge. “I’ve been making fudge since I was eight. The recipe is my great grandmother’s. We started selling it because it’s been so difficult with the market lately, we just could not make ends meet. We had these recipes, and people were always complimenting us on our cooking, so we thought we’d try selling it. We have six flavours, including raspberry, which we make with real raspberries, and birch when I can find Canadian birch syrup. The quality of ingredients makes all the difference. I use real cream and butter. How long you beat it is also a big factor, as is the temperature. On days when it’s too hot it just won’t set. We also make caramel, hard toffee and oatmeal cereal mixes.
