Dining Celiac

If you are preparing a meal for someone with celiac disease, you’ll need to avoid products which contain gluten, or might be contaminated with it. Fortunately, there are lots of great Alberta products available. Here are some tips:

  • Keep utensils and cookware clean.
  • Cook with fresh Alberta meat, fish, veggies, eggs and cheese.
  • Use corn, soy and potato products, including flour, in your cooking.
  • Avoid baked goods, except those goods made from such bakeries as Terra Cotto.
  • Don’t thicken soups, sauces or gravies with gluten-containing flour, such as wheat, rye or barley.
  • Avoid crumbs and batters for coating.
  • Hidden sources of gluten may include HVP (hydrolyzed vegetable protein), malt flavouring, modified wheat starch or other unidentified food starch.
  • Foods such as bouillon cubes, processed meats, Worcestershire sauce, baking powder, prepared dressings, soups and seasoning may also contain gluten.
